What if I told you that you can eat a veggie burger with an outstanding flavor! Well, I think it is difficult to imagine a nice burger without meat. In fact, it’s difficult but not impossible to enjoy and love it.
A vegetarian friend gave me this recipe, and I developed it for people that suffer from high blood pressure. This recipe has 3 main ingredients that would change your mindset of burgers.
VEGGIE BURGER – Special for People with High Blood Pressure
You need 1 can of black-eyed peas, 2 sweet potatoes, 1 cup of diced cooked mushrooms, 1 tablespoon of ground turmeric, 3 cloves of garlic minced, 1 tablespoon of ground cumin, a hand full of parsley finely chopped, a pinch of freshly ground black pepper, 1/2 cup of bread crust, 1 medium-size piece of ginger chopped and sunflower spray oil.
For the oven, you need a tray and parchment paper. To serve, you need 6 burger buns, 6 lettuce leaves, 2 tomatoes chopped, 1 red onion chopped, 3 lemon and 3 tablespoons of mustard.
Rinse and drain the black-eyed peas in a bowl, add the bread crust, turmeric, cumin, garlic, parsley, ginger, and smash the beans with a spoon. Meanwhile, peel and add spay sunflower to the sweet potatoes and cook them for about 20 minutes in the microwave.
Add the cooked mushrooms and sweet potatoes to the previous mix, use your hands to smash the ingredients and create a soft paste. Place six portions on the tray with parchment paper, creating round shapes of the paste.
Preheat the oven to 220°C and bake for about 25 minutes and then turn every portion over and bake for another 15 minutes. Let it cool down for 5 minutes and serve on a burger bun, add the mustard, lettuce, tomato, the freshly ground pepper and squeeze half lemon on top.
