Cauliflower Pizza

When I was a child, I remember my mother exchanging recipes with her friends by the phone. She would sit for hours holding a brown pocketbook in order to copy a new recipe.

Actually, the pocketbook has all the recipes that my Mum has been collecting for years. Enjoy the following recipe that can help to avoid sugar without giving up on pizza.

CAULIFLOWER PIZZA – Special for People with Diabetes.

For the crust, you will need 1 cauliflower, 2 eggs, 1 cup of low-fat mozzarella cheese,  1 spoon of baking powder, a pinch of freshly grounded pepper, and a pinch of salt. 1 parchment paper sheet for the tray that you are going to use in the oven. Toppings: 2 chicken breast, 2 red peppers, 8 mushrooms.

Start by chopping the cauliflower into small pieces, or you can use the food processor. Boil the mix for about 15 minutes or until it is soft. Remove all the water and placed it on a flat table,  tried to absorb the excess of water with a paper towel.

Bring everything into a bowl, add the eggs, cheese, salt, and paper. Then press the crust into a tray with the parchment paper, and create the shape or size of your preference. Bake at 250 degrees in the oven for about 30 min.

In the meanwhile, boil the chicken breast for 12 minutes, then remove it from the water and shred with two forks. Place the peppers in the flame in order to burn the skin and constantly rotated them, they will appear black after 15 minutes.

Remove the skin and seeds and chop the peppers in juliennes. Chop the mushrooms and boiled them in a pan over a medium heat with some salt for 10 minutes, then drain the mushrooms.

Remove the crust from the oven and place the pulled chicken with the peppers and the mushrooms. Finally, bake them for another 10 minutes. Let them cool down before cut into pieces.
